Ingredients:

8 ounces chicken or vegetable broth or stock

14-16 ounce can unsweetened coconut milk

2 tablespoons curry powder

1 jalapeño pepper, seeded, minced

1 teaspoon freshly minced ginger

2 russet potatoes chopped

2 carrots peeled and sliced

1 cup fresh spinach (optional)

2 tablespoons fresh lime juice

1 yellow onion chopped

1/4 cup chopped fresh thyme

1/4 cup chopped green onion

4 tablespoons olive oil

Lime wedges

 

Preparation:

Heat olive oil in a medium Dutch oven on medium heat. Add the yellow onions, ginger, thyme and jalapeno pepper; and saute for 5 to 8 minutes. Add curry powder and let sit until curry powder turns a dark gold. Add broth, lime juice, potatoes and carrots, and cook 8-10 minutes until potatoes are nearly done. Add coconut milk and simmer for 15-20 minutes. Fold in fresh spinach and stir soup until wilted. Salt and pepper to taste. Garnish soup with any additional lime juice and add green onions in the soup bowls and serve.

Total cooking time: 35-40 minutes
