Cauliflower and Leek Detox Soup

Cauliflower and Leek Detox Soup: Experience this deliciously luscious velvety richness. It will truly knock your socks off and it is very simple and easy to make. You won’t be disappointed.


1 head of Fresh Cauliflower cut into florets.

2/3 Cup of chopped Leeks (include some of the dark green stems, but wash leeks well because they can be sandy).

1/3 Cup chopped Onions

1/3 Cup chopped Green Bell Pepper

2-3 Garlic Coves chopped

3 Quarts Chicken Stock

4-6 Slices of Smoked Turkey Bacon (optional)

Sprigs of Fresh Cilantro for garnish

Sprigs of Fresh Thyme for garnish



In a medium size pot, add 3 quarts Vegetable, Chicken or Turkey Stock, or Bone Broth. Add Cauliflower, Leeks, Onions, Green Bell Pepper, Garlic Cloves, and  cook on medium heat until Cauliflower softens. If you are choosing the optional turkey bacon, set oven to 350 degrees until hot. Line a small flat pan with parchment paper, add 4-6 strips of Turkey Bacon and bake for 15-20 minutes. Remove Turkey Bacon from oven. Let Turkey Bacon cool approximately 6-7 minutes on paper towel. Once Turkey Bacon is cool, cut into thin strips and add to soup pot. Once Cauliflower is soft, turn off heat and blend until smooth all ingredients in the the pot, if you have an immersion blender. If you have a counter top blender, add soup ingredients a little at a time to the container until the whole pot is completely blended. Once soup is velvety soft and creamy, adjust seasonings and garnish with fresh Cilantro and Thyme, then serve.
