1 Medium to Large head of cabbage Shredded
1 Whole Onion chopped
1/3 Cup Leeks chopped
5-6 Garlic Cloves, minced
2 Tablespoons Ginger Freshly chopped
1 Whole Tomato diced
1/4 Cup Fresh Thyme chopped
1/4 Cup Fresh Parsley chopped
1/4 Cup Fresh Basil chopped
1/4 Cup Fresh Oregano
3 Quarts Vegetable or Chicken Stock or Bone Broth
Sea Salt and Ground Pepper to taste
Pour into a medium size pot, 3 quarts of stock or broth, add Onion, Garlic, Leeks and Ginger. Cook on medium heat for 15-20 minutes. Add Cabbage, Tomato, fresh Thyme, Parsley, Basil and Oregano. Cover and continue cooking on medium heat for an additional 15 minutes. Adjust seasonings and serve.
